- In no way wishing to be confrontational, but just for my own convenience, I'm putting them back in the article. I'll hide those that are red for now. But red links are supposed to be good in wikipedia, as they show which articles still need to be written, and I would like to propose that they be unhidden for that very reason. I was, I must admit, totally gobsmacked to find no article on the Doma vaquera, arguably the most influential riding style in the world; a red link would have drawn attention to that oversight.
- I have no real idea how these things should be organised, but thought about four main divisions: International and Olympic, English, Western, Traditional and Regional, with maybe a catchall Other at the end. But the more I think about it, the harder it seems to make any sense of it. An alternative would be a simple alphabetic list with no categories.

- That hidden text works. It is what we have at the list of horse breeds to hold spots so people don't just add stuff randomly (It used to be red link city!) . As for categories, it's a work in progress. You are on a good track, I did add "racing" and "rodeo" because they don't fit neatly into some of the others (rodeos being not just western, but also Aussies, Chilean, etc...) I wouldn't use "traditional" because EVERYONE's "thing" is traditional. And some things will no doubt have to be in multiple categories, but maybe only wikilinked the first time. I like the regional category for the stuff that doesn't involve millions of people and horses the way the English and Western disciplines do. Maybe add "regional" for now, come up with some better way to categorize the team sports like Polo and polocrosse (hey! "Team Sports") and I don't know what to do with the timed game stuff like Gymkhana, maybe "general" is good for that. All a work in progress.
